A New HEALTHY recipe that tastes delicious!!! Quinoa Porridge!

 I don't know why, but Lil'L has decided as of late that he doesn't like any of his "go - to" breakfast foods anymore! He won't eat eggs, toast, cereal or fruit... Foods he usually LOVES!  Considering we don't eat meat, don't drink dairy and I don't want to give him a carb / sugar overload first thing in the morning, I really needed a new idea for a breakfast that my boy would eat.  Lil'L loves oatmeal, but I want to make sure that he is getting more protein and vitamins in his diet to make up for the fact that we don't eat meat. Today we tried Quinoa Porridge. Quinoa is a sprouted seed (not a grain as people think it is) that provides a complete protein. I just kind of improvised the recipe, but it turned out super good and Lil'L gobbled it right up.
Here is the recipe! Enjoy!
Quinoa Porridge
(Serves 4)

Ingredients:
  • 1/2 cup of uncooked organic quinoa
  • 1 1/2 cups of your "milk" of choice (soy milk, almond milk, rice milk or cow's milk all work)
  • 1 tsp. ground cinnamon
  • 1 tsp. pure vanilla extract
  • a "handfull" of raisins
  • 2 tbsp. of raw sugar or brown sugar
Preparation:
  • Mix all of the ingredients together in a medium sized pot. 
  • Bring the mixture to a boil over MEDIUM  heat.
  • Once boiling, stir the mixture, cover with a lid,  and reduce the heat to LOW.
  • Let it simmer for about 10 minutes, then stir it. 
  • If you are happy with the consistency, and the quinoa is cooked (translucent), then you can eat it! If you desire a thicker porridge, let it simmer for an additional 5 minutes. 
  • Serve topped with fresh fruit and your "milk" of choice! We love ours with soy milk!
